Dip sole in egg wash and then coat with Panko crumb. Heat skillet with olive oil. Fry coated sole until golden. Remove excess oil from pan & discard. Add butter, shrimp & golden raisins to pan. Toss until hot. Squeeze juice from the orange over pan. Add pine nuts & chives to taste. Serve over Panko coated sole.
