Twenty one of those years werespent at his brother's restaurant also called "LaScala" in Worcester, after which he opened his own restaurant called "The Fireside" in Millbury, Massachusetts. So if Mama isn't available to make y ou that delectable Italian dinner, do yourself a favor and savor the delights Chef Simone offers in his old Italian way...your stomach will thank you! » I PESTO WITH GRILLED CHICKEN < Ingredients for 4 Servings: i 1 lb. of Semolina Pasta (Rottini , Fussilli or Linguini) 1 lb. Boneless Chicken Breast 1 Bunch of Fresh Basil 1 Bunch of Fresh Flat Parsley 2 Cloves of Garlic 1/4 Cup Olive Oil 1/2 tsp. Pepper i 8 Oz. Cream Cheese 1 Cup Grated Pecorino Romano Cheese 112 Cup Walnuts or Pine Nuts Combine all ingredients except the chicken breast and walnuts into a ; food processor or blender, and blend until smooth and creamy. If the mixture is too thick, add a little bit of water, then add the walnuts or pine nuts and blend for 30 seconds, so the nuts stay chunky. Cut the chicken breast into 1/2 inch slices. Heat the blended mixture in a sauce pan on a medium low heat, stirring constantly to prevent burning, and add the chicken slices to this mixture and cook until done. Prepare your pasta of choice, drain the pasta and add the blended mixture to it, tossing nicely. Chef Simone recommends a nice Chianti to accompany this dish. L_ar- _-,_ j_
