Italian Minestrone
1 lb Chopped Zuccini Camellini beans 1 cup drained
1 Cup Diced potatoes 1/2 cup Extra virgin olive oil
1 Cup Fresh Green Beans 3 tbls Butter
1 Cup Onions chopped fine 1/2 cup Tomatoes(peeled & diced)
3 Cups Chopped Cabbage I cup Parmesan Cheese
1 Cup Diced Carrots 1/2 Cup Diced Celery
4 cups Beef broth
Add salt to taste with 6 cups of water
In a container ( pot) big enough for all the ingredients, heat up
the oil and butter and add onions ( cut in small pieces). Cook
until the color of the onions becomes golden. Then add the
carrots and stir well. Cook about 2-3 minutes and add green
beans. In another two minutes add the potatoes and the zuccini.
After cooking for about 5 minutes, add cabbage, give it a good
stir and let cook for additional 2 minutes. Add tomatoes and
broth, set the heat to medium/low, stir, cover, add a little salt
(have in mind parmesan will be added later and will make the
soup saltier). Let the soup cook for about 2 112 hours and the
cannellini beans and cook for additional 30 minutes. Add the
parmesan just before taking the soup off the heat.
